糖醋汁调法与成品效果

用料
  • 上好粉的肉 200克
  • 调和油 1000克
  • 番茄酱 100克
  • 清水 50克
  • 白醋 25克
  • 白糖 30克
  • 盐 1克
做法步骤

1、菠萝焯水至热倒出

2、青红线椒焯水至热倒出

3、糖醋汁调法:番茄酱为主

4、清水调稠稀度

5、白醋调酸度

6、白糖调甜度;热油调光泽度

7、调出来的效果

8、炸好的咕噜肉倒出

9、充分翻拌均匀

菜名:菠萝咕噜肉主料:五花中腩肉/里脊肉/猪劲肉/梅头肉250克辅料:菠萝50克、青红黄彩圆椒各3件、葱度5条、鸡蛋黄50克调料:盐、胡椒粉、米酒、生粉、植物油、番茄酱、白醋味型:酸甜可口烹饪流程:1、菠萝去皮改刀成0.5厘米的厚片备用;青红黄椒改刀成等腰三角形的椒角备用;香葱改刀成5厘米的段备用;2、五花中腩肉改刀成:长8厘米、厚0.2厘米、宽3厘米备用;切好的五花腩肉内加入盐、胡椒粉、米酒搅拌到起胶上劲的效果,加入鸡蛋黄与少许生粉搅拌到起胶很粘手的效果,把五花肉依次捏成小圆球,然后放到生粉内依次均匀裹住生粉捏紧备用;3、锅中油温烧到四至五成左右(120度-150度),依次下入上好粉的咕噜肉浸炸至熟,表面金黄酥脆倒出(起锅前油温升到六成180度左右);4、锅中烧水加少许盐,下入菠萝、青红黄椒角飞熟倒出备用;简单版糖醋汁:番茄酱1.5勺、白醋半勺、清水半勺、白糖半勺全部混合一起搅拌均匀(小汤勺1勺的重量标准是50克),搅拌均匀的糖醋汁倒入锅中加热,加入一小勺热油搅拌均匀增加光泽度,然后打出调好的三分之一的糖醋汁,倒入炸好的咕噜肉与辅料快速翻炒均匀出锅装盘,表面淋适量糖醋汁即可;注意事项:①五花肉加入蛋黄与少许生粉后,一定要很起胶粘手时才能粘裹生粉,这样效果才会更好;②炸咕噜肉时锅内一定要够油温,不然脱粉,影响美观及口感;
